After a long day of fishing during our road trip in Belize, we were determined to explore the local food scene, and our curiosity quickly turned into a full-blown obsession. We stopped at roadside food stalls, markets, and hidden local dives, savoring every bite. Each meal, from stewed chicken with rice and beans to fresh ceviche bursting with citrus flavors, told a unique story about the culture.
One of the most memorable experiences was at Tarpon Caye Lodge, where the chef, who was from Hopkins, noticed our enthusiasm and shared her family’s famous bean recipe. She walked us through each step, explaining its importance. Her generosity and warmth perfectly captured the spirit of Belize, and our group was stoked to learn about the people behind these incredible dishes.
By the end of our trip, fishing was only part of our story. Belize captivated us with its waters, rich culture, friendly locals, and delicious food. We initially came for permit but left with a deep appreciation for the country’s traditions and flavors.
As we packed up for the drive back, we realized we were bringing home more than just memories of great fishing. We carried the taste of Belize, the stories of its people, and a newfound respect for a place that gave us more than we ever expected.
